The source has not changed: one parcel at Oakbank, a mostly east-facing slope 400 metres up, shallow red loam over schist and ironstone, planted in 1998 and farmed on organic lines with no herbicide. Warm days there get Syrah ripe while breezes and cold nights keep the acid honest. Ferment was wild in one-tonne open vats, then ten months in older puncheon and demi-muid with under 10 per cent new oak.\u003c\/p\u003e\n\u003cp\u003eElegant and spicy, with red plum, white pepper and a hint of bay, silky in texture and quiet in tannin. Lighter than most Hills Shiraz. Fifteen degrees.
