The style he chases here is the cooler, spicier face of Adelaide Hills Shiraz, buoyancy and lacy shape ahead of weight. Whole bunches and whole berries go into the ferment, and oak stays deliberately quiet: older puncheons and demi-muids, under a tenth of it new, for ten months.\u003c\/p\u003e\n\u003cp\u003eCool-fruited and spicy, with red and black cherry, crushed pepper and something faintly floral. Fine, lacy tannins and a long, fresh close.
