The Cabernet was pressed straight off skins, so what colour the wine has came off the press with no maceration at all. Fermentation was wild, in old barrique and foudre, which is unusual treatment for pink wine in this country and the reason this carries more texture and savour than the pale Mediterranean model most Australian producers copy.\u003c\/p\u003e\n\u003cp\u003ePale but not shy: redcurrant, blood orange and a dry, savoury edge from old wood. Bone-dry, with fine acid and a little grip. Serve at 9 degrees.
