Sangiovese from Forreston, at about 360 metres, makes up half of it; the clone is pale, fleshy and juicy, and suits the job. Merlot and a miscellany of white varieties fill out the rest and add depth. Everything is pressed straight off skins, held a day, then sent to old barrique and foudre for a wild ferment. A few months on lees follow before bottling, and that is where the savoury character underneath the fruit comes from.\u003c\/p\u003e\n\u003cp\u003eSummer berries, watermelon flesh and rind, sweet spice and a lees-derived savouriness playing underneath. Juicy and fleshy with racy acid and a touch of grip.
