Fermentation was split between tank and wood, 85 per cent barrel and 15 per cent demi-muid, all older and neutral, so the lees could lend breadth without any oak flavour arriving with it. Michael Downer treats the variety as worth the trouble, and the wine has energy without the green shrillness the grape often gets saddled with.\u003c\/p\u003e\n\u003cp\u003ePassionfruit, lime leaf and cut herbs, with a creamy thread from lees.
