Fruit was picked by hand and destemmed into open fermenters with 15 per cent whole bunches. Ten months in French oak, a mix of new at 15 per cent and older barrique and puncheon, finished the wine before bottling. Adelaide Hills Shiraz of this shape still surprises people who expect weight from South Australia.\u003c\/p\u003e\n\u003cp\u003eRed cherry and raspberry, black pepper, a little sage. Medium-bodied and fragrant, with fine tannin and a fresh, savoury close that owes more to fruit than to oak.
