That ground gives him the violet-and-red-fruit profile he is after, a different proposition from the herbal, heavily structured Franc most Australian growers end up with. The fruit was picked by hand and fully destemmed, then racked into French barrique, only a tenth of it new, where it rested ten months. Cabernet Franc on its own remains rare in the Adelaide Hills.\u003c\/p\u003e\n\u003cp\u003eViolets, raspberry and crushed green peppercorn, with a sappy, leafy thread. Medium-bodied and bright, the tannins fine and brisk.
