Domaine Theulot Juillot, based at Mercurey, made its first crémant in 2004 and it has remained a 100 per cent Pinot Noir Blanc de Noirs ever since, drawn from a parcel of red Bourgogne Côte Chalonnaise. It is labelled under the Nathalie Theulot name, one of a small number of négociant wines made at the domaine. The style aims squarely at refreshment, so the base wine is fermented in stainless steel rather than barrel, and unlike the domaine's Mercurey whites it is vinified cool, at 14 degrees, to hold on to the delicate red-fruited aromatics. Dosage is minimal, between 5 and 7 grams per litre.\u003c\/p\u003e\n\u003cp\u003eDrink young, as an aperitif or with fried food, oysters or a plate of charcuterie.
