For L'Ensemble, individual barrels from different sites are tasted and chosen, then brought together into one wine, with new French oak adding frame. The 2023 is deep purple and effusive, with forest floor, pomegranate, cherry cola, apple blossom, fresh herbs and raspberry, then cherry, tangerine and blue fruit on a textured, elastic palate with fine tannins and a long, graceful finish.\u003c\/p\u003e\n\u003cp\u003eOpen it about half an hour ahead and pour at cool room temperature with duck confit, pork belly or a beetroot and goat's cheese tart.
