Named after one of his daughters, and a gentle play on Château Margaux, this Pinot Noir is assembled from about twenty plots between Santenay and Pernand-Vergelesses at 230 to 250 metres. After destemming, the fruit ferments in open vats for two to three weeks. The wine then spends around sixteen months maturing, largely in barrel, with only about an eighth of the oak new.\u003c\/p\u003e\n\u003cp\u003ePour it at cellar temperature, around 16 degrees, with a cheese board, duck rillettes, veal or baked salmon.
