Based in the village itself, the house was founded in 1984 by Olivier Leflaive and draws on a mix of estate vineyards and fruit bought from growers it has worked with for many years. Grapes are harvested by hand and pressed gently, then the juice ferments in French oak barrels with a restrained proportion of new wood. Time on fine lees adds texture without masking the cut and mineral feel that the appellation is known for.\u003c\/p\u003e\n\u003cp\u003eThis is a poised Chardonnay that is best served cool but not icy, around 10 to 12 degrees. Try it with grilled fish, prawns, crab, goat's cheese or a simple roast chicken.
