Hand-picked Chardonnay is whole-bunch pressed and fermented in barrel, followed by lees ageing in oak and a short spell in tank so the wine goes to bottle settled and clear. New oak is kept in check so the site speaks first.\u003c\/p\u003e\n\u003cp\u003eA half bottle is handy for a dinner for two or as a starter wine before a red. Chill it to around 10 to 12 degrees and pour it with oysters, seared scallops, sashimi or a soft cheese.
