The Mâconnais is Chardonnay country on limestone, warmer and gentler in relief than the Côte d'Or to the north, and it was for a long time treated chiefly as a source of volume. The Merlins were among the growers who changed that view, pressing whole bunches, fermenting slowly and ageing in barrel rather than in tank.
