Overture is sourced from those estate vineyards and, according to the winery, combines wine lots from across vintages with extended barrel ageing, which gives it a supple frame and silky texture. Cabernet Sauvignon provides the backbone of blackberry and cassis, while Merlot, Cabernet Franc and Petit Verdot bring black cherry, red currant and violet. It is a generous, textural wine that carries the family likeness of the flagship at a more accessible stage.\u003c\/p\u003e\n\u003cp\u003ePour it at 16 to 18 degrees; a short decant helps it open up. Slow-braised beef cheeks, a mushroom and truffle risotto or chargrilled lamb chops all sit comfortably alongside.
