Domaine de l'Oratoire Saint-Martin, run by the Alary brothers, has been farming biodynamically here for years and holds some of the oldest vines in the village. Les Douyes is drawn from one such parcel: roughly sixty per cent Grenache and forty per cent Mourvèdre with a touch of Counoise, all interplanted in 1905 in the traditional manner. Yields run between eighteen and twenty-five hectolitres per hectare, which accounts for much of the wine's concentration. It is aged for twelve to fifteen months in large old foudre, a shorter élevage than the domaine's Haut Coustias, though the two stand comparison in quality.\u003c\/p\u003e\n\u003cp\u003eNeeds a few years, or a decanter, to fuse and unfurl.
