Cabernet Sauvignon and Merlot form the core of the blend. The varieties are fermented separately in small stainless steel tanks to keep the fruit fresh, and malolactic fermentation also takes place in steel. Afterwards the wine spends about ten months in barriques that were previously used for the flagship, so the oak influence is gentle. It is handled by the Ornellaia winemaking team with the same care in picking and sorting as the senior wines.\u003c\/p\u003e\n\u003cp\u003eMedium-bodied and ready to drink on release, it needs no decanting. Serve at around 16 degrees with pizza, pasta al forno, grilled sausages, burgers or a midweek roast.
