The crèmes are made by macerating whole fruit in neutral alcohol for several weeks so that colour and flavour are drawn out by cold infusion rather than by heat or distillation, after which the infusion is pressed, blended and sweetened. French law requires a high minimum sugar level for anything labelled crème, which gives the liqueur its thick texture.
