Scavino took on Bricco Ambrogio at the beginning of the 2000s and the cru has since been recognised as one of the finest sites in the commune. The estate itself was founded at Castiglione Falletto in 1921 and has been guided by Enrico Scavino since the 1950s, now with his daughters Enrica and Elisa. Fermentation is in stainless steel with an extended maceration, followed by ageing in French oak.\u003c\/p\u003e\n\n\u003cp\u003eDecant ahead of serving at around 18 degrees with braised meats, agnolotti del plin or a mushroom ragu.
