Scavino draws on holdings spread through the zone, so the wine reflects a range of soils and expositions rather than a single hillside. The family estate was founded at Castiglione Falletto in 1921 by Lorenzo Scavino and his son Paolo; Enrico Scavino joined in 1951 and still directs the property with his daughters Enrica and Elisa. Nebbiolo is fermented with an extended maceration and matured in French oak, in line with the minimum ageing that the DOCG requires before release.\u003c\/p\u003e\n\n\u003cp\u003eDecant before serving at around 18 degrees with braised beef, risotto or aged cheese.
