Growers here have historically favoured long, patient macerations and large oak, an approach the site seems to invite. Paolo Scavino, based at Castiglione Falletto, has been in family hands since 1921 and has been led by Enrico Scavino since the 1950s, now with his daughters Enrica and Elisa.
