The fumé of the name is generally taken to refer to that flinty ground rather than to smoke or to oak, of which there is none here. Pascal Jolivet established his house in Sancerre in 1987 and works across both appellations, favouring indigenous yeasts, long cool fermentations in stainless steel and as little handling as possible, on the view that the vineyard rather than the cellar should set the terms.
