The estate now has around 28 hectares across Sancerre and Pouilly-Fumé, spread over the three classic soil types of the area: chalky caillottes, the limestone and clay marls called terres blanches, and flinty silex. Winemaking is deliberately hands-off. The juice is settled naturally, fermented with wild yeasts at controlled temperatures and left on its lees, with sulphur kept low, so that the wine reflects where it was grown.\u003c\/p\u003e\n\u003cp\u003ePour it well chilled as an aperitif, or with oysters, goat's cheese, grilled whiting, asparagus or a herb salad. It is light-bodied, dry and crisp.
