Domaine Pascal Reverdy is based at Maimbray, in the commune of Sury-en-Vaux at the northern end of the appellation, and farms its vines organically. Terre de Maimbray is named for that home hamlet and is the estate's principal white cuvée, drawn from clay-limestone slopes rather than a single lieu-dit and fermented and aged entirely in tank with no oak. Sury-en-Vaux lies at the cooler northern edge of Sancerre, which preserves acidity and gives the wines a lean, upright shape.
