Grapes ripen slowly here and keep plenty of natural acidity, which gives Chardonnay drive and a fine, mineral line. Patrick works with small, high-rainfall sites in the hills east of Melbourne and bottles the best of them separately, in small batches and with a light hand.\u003c\/p\u003e\n\u003cp\u003eTight, textural and precise, with the energy to improve over a few years in the cellar.
