It is seventy per cent Pinot Noir and thirty per cent Chardonnay, all of it grand cru Bouzy, from a south facing slope on the Montagne de Reims where chalk sits under shallow topsoil. Bouzy's Pinot Noir is among the ripest in Champagne and supplies the weight; the Chardonnay is there for line rather than volume. The family has held these parcels since 1833.
