Gadenne's fruit comes from a single organically certified plot of 0.4 hectares on calcareous clay with a westerly aspect, planted at a dense 7,500 vines per hectare, which keeps yields to a low 25 hectolitres per hectare. The fruit was hand-picked and pressed gently over about two hours, then fermented in stainless steel. The wine went through full malolactic fermentation and was aged for six months on its lees in tank, with no oak, an approach that keeps the variety's texture and stone-fruit weight without adding to it.\u003c\/p\u003e\n\u003cp\u003eDrink over the next four or five years with freshwater fish, roast chicken or a fondue.
