Paul Gadenne farms two plots of it: a parcel of young vines at Chignin and this older holding some 20 kilometres away at Saint-Jean-de-la-Porte, one of the better-regarded sites for the variety. The vines there are around 60 years old, face south and sit at 450 metres on clay-limestone soils. Fermentation is with whole bunches over 15 to 20 days, with gentle pump-overs, and the wine is then matured on fine lees in tank for eight months, so nothing comes between the grape and the site.\u003c\/p\u003e\n\u003cp\u003eDrink over the next five years, lightly chilled if you like, with charcuterie, diots sausage or a tomme de Savoie.
