Pax Mahle ferments with whole clusters, all of them, then ages the wine ten months in a mix of neutral French puncheon and concrete and bottles it unfiltered. Whole-bunch work and neutral vessels are the constants across his Syrah, and they are why these wines read as Northern Rhône cousins.\u003c\/p\u003e\n\u003cp\u003eIntensely perfumed, with focussed dark fruit, black olive salinity, violet and pepper, and acidity that keeps it moving.
