Burgundy has grown blackcurrants commercially since the nineteenth century, and the Noir de Bourgogne variety, with its small, dark berries, is the one growers there prize. The drink owes its fame to Canon Félix Kir, mayor of Dijon after the Second World War, who served white Burgundy topped with cassis at civic receptions and lent the aperitif his name.\u003c\/p\u003e\n\n\u003cp\u003eTraditionally mixed with dry white wine, Aligoté for a proper kir, or with sparkling wine for a kir royal; it also works simply over ice or with soda.
