For the framboise, raspberries are macerated in alcohol to draw out their colour and aroma, then the liquid is separated from the fruit and sweetened. It is a liqueur, not a distilled raspberry eau-de-vie, with a deep ruby colour and an alcohol of around 18%.\u003c\/p\u003e\n\u003cp\u003eServe chilled as a digestif, or add a splash to a glass of sparkling wine for a raspberry twist on the Kir Royale. It is also lovely over vanilla ice cream, in a trifle or with a chocolate dessert.
