The family grow Ugni Blanc in the chalk around the village of Segonzac, ferment it without sulphur into a thin, acidic wine and distil it twice on the lees in Charentais copper pot stills, which adds weight and aroma. Ageing happens in French oak in their own cellars, and it's bottled at 40% alcohol.\u003c\/p\u003e\u003cp\u003eDried fig, orange peel, spice and plenty of rancio.
