The village appellation covers the gentler slopes and plateau land on either side of the Serein, planted on Kimmeridgian marl, a grey limestone clay laid down in a shallow sea and packed with small fossil oyster shells, which is generally credited with the chalky, saline signature of the wines. Village Chablis of this type is normally fermented and raised in stainless steel with no oak so that the site speaks plainly.
