Its slopes are steep and its soils thin Kimmeridgian marl over limestone, and the exposure is cooler than the grand cru hillside opposite, which tends to give wines of marked tension and a stony, taut profile rather than early richness. Premier cru fruit is picked and kept separate, fermented at cool temperature and given a longer élevage on fine lees than village wine, sometimes with a portion in older barrel.
