Half the ferment was whole bunches. Maturation ran close to two years: first in older 600- and 1,500-litre Stockinger casks, then eight months in a 2,000-litre Stockinger, with bottling in late December 2023. Large wood and no new oak leave perfume and structure to come from the site alone.\u003c\/p\u003e\n\u003cp\u003eLifted and floral, with blue fruit, black pepper and a fine, granite-edged tannin line, deeper than the perfume suggests. Serve at 16 degrees, decanted.
