The Syrah fermented naturally with varying degrees of crushing and time on skins, some of it fully carbonic. Whole berries and whole bunches are used here specifically to bring perfume and finesse to fruit that Heathcote otherwise delivers with plenty of power. Fermentation happened in stainless steel and concrete, ageing mostly in large neutral Stockinger wood with some older barriques from various coopers. No fining, no filtration, sulphur kept low.\u003c\/p\u003e\n\u003cp\u003eBright and juicy, with blackberry, pepper and a fresh mineral lift, more energy than weight and a carbonic crunch through the middle.
