The other third is Chardonnay, fermented and raised in a new Tronçais cask from Dominique Laurent, and it does the sharpening. Élevage began in 500-litre casks, glass Wineglobes and seasoned barriques, then moved to steel for a second year before bottling in late November 2023. The estate is better known for Pinot Noir and Syrah grown at extreme vine densities; this white began as an experiment in the cellar and earned its place.\u003c\/p\u003e\n\u003cp\u003eTextural and savoury: white peach, dried pear, almond skin and a saline finish. Eleven to twelve degrees, in a decent-sized glass.
