Brut Réserve, known to many by its white foil, is blended in roughly equal parts from Pinot Noir, Pinot Meunier and Chardonnay drawn from around thirty villages, then given depth by reserve wines held back from earlier harvests. It is aged in the deep, cold cellars beneath Épernay for considerably longer than the fifteen months demanded of non vintage champagne, and each bottle is riddled by hand.
