Vespaiola takes its name from the wasps, vespe in Italian, drawn to its sweet ripe bunches, and it is grown almost nowhere outside the Breganze area a short distance from the distillery. The grapes are picked in September, which gives this grappa its name, and the pomace left after pressing is taken to the still while it is still fresh.
