Grappa is distilled not from wine but from vinaccia, the skins, pips and stems left after pressing, and the modern practice of distilling each grape variety separately is what turned it from a rustic by product into a spirit taken seriously. The Po' di Poli range is built on exactly that idea, with each bottling drawn from a single variety and named for the character it shows.
