The Po' di Poli range takes a single grape variety at a time and bottles it on its own, a practice that has become the mark of good modern grappa and a long way from the rough communal spirit of the past. This one is drawn from Pinot pomace, the skins and pips left after pressing, and is distilled in small copper stills heated by steam rather than run continuously.
