Locals called the locomotive the vaca mora, the dark cow, for the smoke it left behind on the climb, and the name has stuck long after the line closed. Amaro is the Italian tradition of macerating herbs, roots, barks and citrus peel to make a bitter digestive, and every region and most families once had their own recipe. Poli make theirs on the same premises as the grappa, using the botanical knowledge that goes with a distilling house of that age.
