The Coal River Valley sits in the rain shadow of the hills around Hobart, making it one of the driest and sunniest corners of Tasmania, yet the island's cool maritime climate keeps ripening slow and acidity high. Butcher's Hill is a single vineyard near Richmond. For the cane-cut style, the fruiting canes are severed once the grapes are ripe and the bunches are left hanging to shrivel and dehydrate, concentrating sugar, acidity and flavour.
