Primo Estate applies the idea in McLaren Vale, passing this blend over skins from its dried-grape Moda. Cabernet Sauvignon gives rich, ripe dark berry fruit and structure, and Sangiovese adds a lift of maraschino cherry and savoury acidity. The ripasso process contributes dark chocolate and nutmeg spice, making for an intense, complex wine at a moderate 13.5% alcohol.\u003c\/p\u003e\n\u003cp\u003eServe at 16 to 18 degrees, with a little time in a decanter if you can. Try it with slow-cooked beef ragù, venison or duck.
