Fermentation is halted while natural grape sugar remains and before the yeast has converted it all to alcohol, which is why the wine usually finishes between five and six degrees and carries a gentle spritz rather than the full pressure of a sparkling wine. It is made in sealed, pressurised tanks and bottled early.
