Whites are a minority here and are made from southern varieties, among them Grenache Blanc, Vermentino, called Rolle in France, and Muscat, planted on stony limestone soils among the scrub. Heat is tempered by altitude in the hills and by the sea air, and the wines are typically pressed gently and fermented cool in stainless steel. The word puech is Occitan for a hill, and recurs throughout Languedoc place names.
