Pyramid Valley took the reins in 2018 and began converting to organics immediately, with BioGro certification following in 2022. A second parcel from Bannockburn fills out the blend. Hand-picked fruit fermented naturally in open-top vessels with 15 per cent whole bunches and a very gentle infusion regime, aged twelve months in French barrels with a quarter new, then six months settling in tank.\u003c\/p\u003e\n\u003cp\u003eSucculent next to the estate's Canterbury reds: dark cherry, exotic spice and an earthy edge, silky and fleshy, finishing long. Drink it now at 16 degrees.
