It was planted in 2000 at 11,111 vines per hectare. Steve Smith MW calls the soils strong and beautifully structured, and the extra clay is why this is the fuller, more savoury of the two Pinots: picked later, darker, with more fruit weight behind tender tannin. Handling is deliberately gentle, with hand sorting, full destemming, fermentation by infusion, three to four weeks on skins and eighteen months in French oak before an unfined, unfiltered bottling.\u003c\/p\u003e\n\u003cp\u003eComposed and pure, with black cherry, forest floor and a fine savoury thread; the tannins are quiet and the length considerable. Serve at 16 degrees, and a decant helps.
