Hand-picked fruit fermented naturally in open-top vessels with a quarter whole bunches, then aged twelve months in French barrels, a fifth of them new, and settled a further six months on fine lees in tank. Waipara's long dry autumns let Pinot hang until the tannins are properly ripe, and the cool nights keep the acidity where it needs to be.\u003c\/p\u003e\n\u003cp\u003eSappy perfume, pure red fruit, bramble and a lick of blue fruit, with powdery tannin and discreet oak.
