Hand-picked, fermented with indigenous yeasts in open-top vessels with 20 per cent whole bunches, aged twelve months in French oak with a fifth new, then six months on light lees in stainless steel. Pyramid Valley leases and manages that old Omihi site, which is why its fruit turns up right across the range.\u003c\/p\u003e\n\u003cp\u003eLayered aromatics, with red plum pit, florals, spice and dried herb, over a deep silky palate of plums and liquorice with plush tannin, tapering to a long savoury finish. Sixteen degrees, decanted twenty minutes.
