Picking ran through April. Fully destemmed, fermented on wild yeasts in open-top vessels, twelve months in French oak with 14 per cent new, then five months on light lees in wooden cuves. A cool wet season broken by warm spells built healthy canopies and clean fruit.\u003c\/p\u003e\n\u003cp\u003eBright ruby, with wild herb, forest floor, red fruit and florals; dense and chalky through the middle, gamey at the edges, with a juicy acid core giving it length. Sixteen degrees. Venison, duck or roasted root vegetables.
